Baked Dill Salmon Recipe for Mechanical Soft Diet

TOTAL TIME REQUIRED:  30 min.

Servings: 8

Ingredients
     1 large salmon fillet (2 pounds)
     2 tablespoons butter, softened
     2 tablespoons mayonnaise
     2 tablespoons lemon juice
     1/2 teaspoon pepper
     1/2 teaspoon dried dill

Instructions:
Pat salmon dry. Grease 13 x 9" baking dish. Place salmon in baking dish. Combine remaining ingredients and spread over salmon.
Bake, uncovered, at 425° for 20-25 minutes or until salmon flakes easily with a fork. 

Serve with mashed potatoes and/or well cooked, soft vegetables.
